Black Friday Picks from Nordstrom and Anthropologie

November 25, 2016 No Comments

Black Friday gives me major anxiety because there are so many deals out there that I have trouble making decisions. It’s like too much pressure. SO. MANY. STORES. I decided to keep things simple by only checking out the two stores that I shop at the most, Nordstrom and Anthropologie. My picks are below…hurry up and check out the sales before everything’s gone! I’ve already had stuff in my shopping bag sell out before I could…

Rustic Thanksgiving Tablescape

November 23, 2016 No Comments

In true Bethany fashion, I procrastinated and just curated my Thanksgiving tablescape yesterday. I literally just threw it together with some help from various pins. If you’re cool like me and waited until the last minute, my tablescape is totally something you can steal ideas from. I didn’t have time to fuss too much over this because I’m more focused on getting Thanksgiving dinner all prepped and ready. You can view my menu if you’re curious. So. Many. Sides. But for me, Thanksgiving is all…

Our Thanksgiving Menu

November 22, 2016 No Comments

One of my favorite things about Thanksgiving is enjoying family recipes that have been passed on by generations. This is the first year I’ll be hosting Thanksgiving completely on my own. However, I have a helpful husband who’s agreed to be on turkey duty, which takes a major load off my plate. He’s pretty brilliant with all types of meat, so I’m confident it’ll be a turkey to remember. I also took a shortcut by picking up a frozen apple pie last…

Fall Fashion Must Haves

November 18, 2016 No Comments

Top Picks from NYC Stylist Phoebe Elizabeth   I’m definitely late on the blogger train to do a fall fashion write up, but it literally JUST got cold here in the Sacramento area so I’m just now finally thinking about dressing warmer. I’m also not one to flaunt my fashion sense and I do NOT consider myself a “fashion blogger.” The thought of taking daily selfies in my mom getups makes me laugh hysterically. My body has changed since having kids and…

Potato and Leek Soup

November 7, 2016 No Comments

Soup is a major staple in the Mitchell house, mostly because when Porter was about one and a half we discovered that he LOVES soup so it provided some dinner table harmony where we aren’t constantly on Porter’s case to eat his damn dinner. We eat soup literally all year long – I’ve even been known to make soup when it’s 105 degrees out. Now that we’ve reached November (when normal people start making soup) I thought I’d share a family recipe…

Healthier Peanut Butter Banana Pancakes

September 20, 2016 No Comments

When I was growing up, pancakes meant getting out a giant yellow box of Bisquick. For my kids, I try to make things a tad healthier (no offense to moms who use Bisquick). I know there are a million variations of a “protein pancake” online. I’ve played around with different recipes and I feel like I’ve got one good enough to share, but I will probably continue to alter it because I just can’t help myself. I’ve made some leaner ones in the past,…

The Best Broccoli Chicken Mac&Cheese

August 23, 2016 No Comments

This is literally the best Mac&Cheese recipe I’ve ever made. Discovered on one of my fave food blogs, Gimme Some Oven, this recipe will make you want to toss out all those nasty boxes of cheese powder and never look back.  It isn’t exactly “healthy,” but the ingredients are real and it’s not loaded with butter like so many are. Plus it includes the protein and veggie, which makes my mom life easier. After posting the mouth watering picture above to my instagram, I got a…

A message for the non-moms

August 15, 2016 No Comments

As much as I hate admitting it, I’m often consumed with thoughts about how friggin’ hard motherhood is. If you accompany me on one of my rare kid free nights out, I’m likely telling you about how I haven’t felt rested in three years and how much I miss going out to dinner or leaving town with my husband at a moment’s notice and how I’m so sick of wiping asses and can we please have a sick free home for just…

Super Easy and TASTY Stuffed Bell Peppers

June 3, 2016 No Comments

June is here and it’s a disgusting 99 degrees today in Roseville, so in my book it’s bell pepper season. I love a good recipe using ingredients I already have AND is quick, yet still delicious! We buy grass fed ground beef from Costco, so I pretty much always have one frozen on hand. Plus the veggies included in this are kind of my weekly grocery shopping staples. And I always have fresh mozzarella in my frig because I’m a caprese addict….

10 Tips to Avoid the “Baby Blues”

May 9, 2016 No Comments

In my eighth week of being a mom to two boys, I’ve been reflecting on how much smoother this postpartum period has gone in comparison to my first. I was truly traumatized after giving birth to Porter (you can read more on my first birth experience if you’re curious). My OB literally thinks I was suffering from Post Traumatic Stress Disorder. During the immediate months after I gave birth, I would wake up in complete hysterics. I had sudden flashbacks of lying…

  • Had the best Sunday celebrating the birthday twins 👯 🎂 Today @ktrec and tomorrow, @laurenerickson1027. I’m sure glad these two babes were born 34 years ago...these girls are my sunshine on a cloudy day ❤️ ⛅️ swipe for some major throwbacks ➡️
  • Fridays are for flashbacks, so here I am 26 years young after I had just said my vows to the love of my life @ryancurtismitchell. My bouquet was so heavy, my forearms were sore for days afterwards 💐🏋🏻‍♀️😂
  • “The days are long but the years are short”
💫
Today I’ve been reflecting a little bit on time as we approach the year 2019; just one year shy of the year 2020, which kind of boggles my mind when I sit and really think about it. 💫
How has it really been that long? I had Porter in 2013 when I was 28 years old and in so many ways it feels like yesterday. How am I in my mid thirties already? How was college graduation literally 11.5 years ago? How is it that Ryan and I have been together for 10 years and married for 6? 💫
My 92 year old grandmother often tells me she doesn’t feel 92 and I’m really starting to understand. I guess all we can do in this life is appreciate every moment because in a blink of an eye, we will wonder how that said moment was so long ago. 💫
This also makes me think about how life is too short to spend time with negative people or drink bad wine. And also I need to get some Botox. 😂🍷💉
  • I graduated from high school in 2003, so I vividly remember the days of film/photo albums. As digital cameras and social media took over, printing photos became kind of a rare thing for me to do. I’ve had so many scares where I think digital photos have been lost forever and I personally know people who have tragically lost precious baby/wedding photos 😭. So when I got the opportunity to partner up with @google using Google Photos, I was intrigued! On my phone and within literally FIVE minutes, I was able to create this album of our trip to Maui from over the summer. It was the easiest thing ever using the Google Photos app, cost about $20, and they have free standard shipping until 12/12! This album has already been a coffee table conversation piece and my kids have been fondly reminiscing our trip 😍. My new normal is definitely to have Google Photo albums! These are also awesome Christmas gifts 🎁🤩#googlephotos #photobooks #googlepartner

  • Yesterday we had our first parent-teacher conference for TK and it turned out to be much more thorough than I would have imagined. It was so amazing to hear feedback from his teacher about this boy we’ve been trying to mold & raise for the past 5 years. So many things said about him that made me just beam with pride, but the most profound praise was that he exhibits an unusual sense of empathy and compassion for others. If there was any one trait in this world I could hope for my kids to have, it would be that❤️ #portercurtis
  • Porter: I wish it was Saturday.
.
Me: Why?
.
Porter: So I can be here and do hugs with you all day.
.
Porter said this to me as I was hugging him. He went from driving me crazy (arguing with basically everything I say all day, urrrday) to making me cry with his sweet words. Hello emotional roller coaster 🤪😭😍❤️
  • When you rush into your toddler’s room because of the silence and find this 🤷🏻‍♀️. I don’t even know who you are anymore Presto 😂 #prestonhenry #thisistwo
